Ingredients

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can low-sodium beef broth
  • 2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 cup cooked white rice
  • Chopped parsley or shredded cheese for topping (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté for 2–3 minutes.
  2. Add ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat.
  3. Stir in bell peppers and garlic. Cook for another 2–3 minutes.
  4. Add diced tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, stirring occasionally.
  6. Stir in cooked rice and simmer for 5 more minutes. Adjust seasoning if needed.
  7. Serve hot, garnished with parsley or cheese if desired.
